Orange Date Apple Pumpkin Bars |

Had this recipe, and wanted to try it without the 1/4 cup oil. I replaced the oil with 4 Tablespoons applesauce. It is very moist. Also, I cut the amount of sugar in half. enjoy! (time doesn't include baking) Ingredients:
1/2 cup egg replacer (aka eggbeaters) |
1/2 cup brown sugar |
1/2 tsp. vfanilla |
1/4 cup applesauce |
1/2 cup pureed pumpkin |
zest from an orange |
3/4 cup a-p flour |
1 tsp. baking powder |
1/2 tsp. salt |
1 tsp. cinnnamon |
1/2 tsp. nutmeg |
1 cup chopped dates |
2 t. finely chopped nuts |
Directions:
1. Preheat oven 350 degrees F. 2. In a medium sized mixing bowl, beat the first 4 ingredients until smooth. Add pumpkin and zest. set aside. 3. combine the dry ingredients and stir them into the creamed mixture. 4. stir in the dates and nuts. Turn into a greased and floured baking pan. This fits a 9 inch square, 10 inch square, and 11 inch X 7 inch pan. Bake for 25-30 ,minutes, and toothpick comes out 99%clean. Let cool and cut into bars. |
