I double this recipe, you can ice them if you want, A lemon butter icing is rather nice, don't overdo the lemon juice though. Ingredients:
4 ounces butter |
1/2 cup sugar |
2 eggs |
1 cup flour |
1 teaspoon baking powder |
1 orange, zest of |
Directions:
1. Preheat oven to 350°F. 2. Cream butter and sugar together until fluffy; add eggs and zest. 3. Sift flour and baking powder together and add alternatively to the sugar/butter mixture with the orange juice. 4. Bake in muffin tins lined with cupcake papers for 10-12 minutes or until they test done. |
