This is lovely with a fresh salad and baked potato pieces. Ingredients:
3 slices bread |
1/4 cup fresh parsley, chopped |
1 orange, grated rind only |
1 red chile, seeded and finely chopped |
4 boneless white fish fillets |
cooking spray |
Directions:
1. Preheat oven to 200 degree C. 2. Process the bread in a blender or food processor to form fine crumbs. 3. Transfer to a bowl and stir in the parsley, orange rind and chilli. 4. Season with salt and pepper. 5. Spray the fish with oil. 6. Place into a baking dish and press the crumb mix onto the fish. 7. Spray with oil again. 8. Cook for 10 to 15 minutes or until fish is cooked through. |
