The crunchy granola and cashews contrast nicely with the mandarin oranges and yogurt. I really liked this recipe. I made it for my breakfast but this would make a nice lite lunch or a afternoon snack. When I made this recipe I used Kashi Golean Crunch cereal, unsweetened coconut, Dannon Light & Fit Orange Mango yogurt. After trying the recipe as directed I added a bit more Kashi as I felt this recipe needed more cereal for more crunch. Ingredients:
1/3 cup granola cereal without raisins |
1/3 cup flaked coconut |
1/3 cup chopped cashews |
24 ounces orange flavored yogurt |
11 ounces mandarin oranges, drained |
Directions:
1. In a bowl, combine the granola, coconut and cashews. 2. In each of four parfait glasses or bowls, layer half of a container yogurt, 2 tablespoons granola mixture, 5 or 6 orange segments, remaining yogurt and remaining granola mixture. 3. Garnish with remaining oranges. Serve immediately. |
