2 t orange juice |
2 t dijon mustard |
1/4 tsp salt |
3/4 cup cracker crumbs |
1 t orange rind |
1/4 tsp pepper |
12 oz chicken breasts |
Directions:
1. Preheat the oven to 350. 2. Spray a non stick baking sheet with spray. 3. In a small bowl, combine the orahge juice, mostard and salt. 4. On a sheet of wax paper, combine the cracker crumbs, orange zest, and pepper. 5. Brush the chicken on both sides with the mustard mixture, then dredge in the crumbs, firmly pressing down to coat both sides. 6. Place the chicken on the baking sheet. 7. Bake 15 minutes, turn over and bake until cooked through, 15-20 minutes longer. |
