Orange Cranberry Nut Bread |

this bread is more like a cakey loaf. It is great as a Brunch pastry, or served with tea/coffee in the afternoon. Ingredients:
1/3 cup orange juice |
2/3 cup buttermilk |
6 tablespoons butter, melted |
1 egg, beaten |
1 cup sugar |
zest from 1 orange |
2 cups all-purpose flour |
1 teaspoon salt |
1 teaspoon baking powder |
1/4 teaspoon baking soda |
1 1/2 cups chopped fresh cranberries |
1/2 cup chopped toasted pecans |
Directions:
1. Preheat oven to 375F, butter and flour a 9-inch loaf pan. 2. Combine ONE and stir together. 3. Rub orange zest into sugar until aromatic, then add the rest of TWO. 4. Stir ONE into TWO. 5. Gently stir in THREE, do not overmix. 6. Pour into pan, bake 20 mins, reduce heat to 350F, bake 30-45 mins, until toothpick comes out clean. |
