This is great for Diabetics and is low calorie. Fresh or frozen cranberries can be used. Ingredients:

1/4 cup margarine |
1 egg |
3 tbs. frozen orange juice concentrate |
3/4 cup all-purpose flour |
1/4 cup rolled oats |
2 1/2 tsp. sugar substitute |
1/4 tsp. baking soda |
1/8 tsp. cream of tartar ( baking powder ) |
1/4 tsp. salt |
1 tsp. grated orange peel |
1/2 cup dried cranberries |
1/2 cup chopped walnuts |
cookie sheet |
non-stick cooking spray ( pam ) |
Directions:
1. 1)Preheat oven to 375º. 2. 2)Cream margarine in a medium bowl. Beat in egg and frozen orange juice concentrate. 3. 3)Combine flour, rolled oats, sugar substitute,baking soda, cream of tartar ( baking powder ), salt and grated orange peel in a separate bowl. 4. 4)Add dry ingredients into the creamed mixture and mix well. Stir in dried cranberries and chopped walnuts. 5. 5)On the Cookie sheet lightly sprayed with non-stick cooking spray drop batter by teaspoonfuls on to the sheet. Bake at 375º for 8 to 10 minutes or until the bottoms of the cookies are lightly browned. Cool on a wire rack. Ready to serve or place in a cookie jar. |
