Homemade corn muffins are so much better than from a mix! These are especially good with homemade chili. They are sweet and orangey. Ingredients:
1 cup yellow cornmeal |
1 cup flour |
1/3 cup sugar |
4 teaspoons baking powder |
1/4 teaspoon salt |
1 egg, beaten |
1 cup milk |
1/4 cup oil |
1 teaspoon orange rind |
Directions:
1. In a mixing bowl, combine all of the dry ingredients except the orange peel. 2. In another bowl, combine all remaining ingredients. 3. Add to cornmeal mixture, stirring until all the ingredients are combined. 4. Fill greased and floured or lined muffin tins 2/3 full. 5. Bake at 425 for 15 minutes. |
