You'll wow guests with these moist,tender cupcakes topped with orange buttercream frosting. Ingredients:
1 pkg(18.25 oz) yellow cake mix |
1c min chocolate chips |
3 eggs |
1c orange juice |
1/2c sour cream |
11/2tsp. grated orange zest |
1c butter,room temp |
1 pkg.(16 oz) confectioners sugar |
Directions:
1. Preheat oven to 350. Line 24 cups with cupcake liners. In small bowl,toss 1 Tbs dry cake mix with chips to coat;reserve 2. On med. speed,beat remaining cake mix with eggs,juice,sour cream and 1 tsp. zest till smooth. Stir in reserved chip mixture. Divide batter among liners. Bake 25 mins. or till toothpick inserted into centers comes out clean Cool 10 mins. Remove from pans to racks;cool completely. 3. On med-high speed,beat butter until fluffy,2 mins. Gradually beat in sugar, then 2 Tbs water until smooth. Stir in remaining 1/2tsp zest. Spread frosting over cupcakes. |
