Orange Chile Jumbo Shrimp |

These jumbo shrimp make an ideal appetizer or cold first course as well as finger buffet food. If you cannot find large shrimp, use the smaller ones, threading 3 or 4 onto the end of each toothpick. Time does not include marinating. Ingredients:
16 jumbo shrimp |
1 orange, zest of |
1 red chili pepper, finely sliced |
2 tablespoons freshly squeezed orange juice |
1 tablespoon light soy sauce |
1 tablespoon chopped fresh chives |
2/3 cup tomato sauce |
2 garlic cloves, crushed |
Directions:
1. Peel the shrimp, removing the shell and legs. Rinse well and place in the bottom of a shallow dish. 2. Combine the remaining ingredients and pour over the shrimp. Leave to marinate in the refrigerator for 2-3 hours. 3. Pre-heat a non-stick griddle pan until hot. Place the shrimp in the pan and cook for 2-3 mins on each side, basting with the marinade during cooking. 4. Once cooked, press a toothpick into each shrimp and place on a serving dish. |
