Ingredients:
2 1/4 cups flour |
3/4 cup firmly packed brown sugar |
3 teaspoons baking powder |
1 teaspoon salt |
1/4 cup softened butter |
1 egg |
1/2 cup milk |
2 tablespoons grated orange rind |
1/4 cup orange juice |
1 cup blueberries (thawed and drained if frozen) |
Directions:
1. In a large mixing bowl combine all the ingredients except the blueberries. 2. Mix at low speed until well blended, then beat at medium speed for 2-minutes. 3. Fold in the blueberries. 4. Turn into a loaf pan which is greased on the*bottom only*. 5. Bake at 350-f for 60-70 minutes until done. 6. Cool 10 minutes then remove pan and let cool fully before slicing. |
