I am not a fan of beets, but my mother made these for the holidays and it was the ONLY way I would eat beets. That says a lot. Ingredients:
1/2 cup sugar |
1/2 teaspoon salt |
2 tablespoons water |
1 tablespoon cornstarch |
1/2 cup vinegar |
1 medium orange |
3 1/2 cups canned beets (drained) |
butter (to taste) |
Directions:
1. Combine first five ingredients in sauce pan. Heat slowly and stir until clear. 2. Add grated orange rind and juice of orange. Add beets and heat through. 3. Add butter to taste before serving. |
