This makes a quick, delicious and easy meal-in-one. We especially like the flavor that the orange juice gives to the dish. Ingredients:
1 tablespoon oil |
1 lb top round beef, cut into 1/2-inch cubes |
1 small onion, diced |
2 garlic cloves, sliced |
1/2 lb sliced mushrooms |
1 cup shredded carrot |
1 (6 ounce) package wild-and-white rice pilaf mix |
1 cup orange juice |
1 cup beef broth |
Directions:
1. Briefly heat oil in large, deep pot over medium-high heat. Add beef and onion. Cook, stirring frequently, for 5 minutes. Add garlic, mushrooms and carrots. Cook another 5 minutes. 2. Add pilaf mix, orange juice and beef broth; bring to a boil, then reduce heat and simmer, covered, for 20 minutes or until liquid has been absorbed. |
