While orzo is shaped very much like rice, it's actually a pasta. Your family will run to the dinner table once they catch a whiff of the aromas of fresh basil and orange rind in this pilaf. Ingredients:
1 (32-ounce) carton fat-free, less-sodium chicken broth |
12 ounces uncooked orzo |
1 tablespoon butter |
1 1/4 cups finely diced carrot (about 2 medium) |
3/4 cup finely diced onion (about 1 small) |
3/4 cup finely diced celery (about 2 stalks) |
2 garlic cloves, minced |
1/4 cup chopped fresh basil |
2 teaspoons grated fresh orange rind |
2 tablespoons fresh orange juice |
1/2 teaspoon salt |
1/4 teaspoon freshly ground black pepper |
Directions:
1. Place broth in a medium sauce-pan; bring broth to a boil. Add orzo; reduce heat, and simmer 9 minutes or until tender. Drain. 2. While orzo cooks, melt butter in a large nonstick skillet over medium heat. Add carrot and next 3 ingredients; sauté 5 to 7 minutes or until tender. Add cooked orzo, basil, and remaining ingredients; stir well to combine. |
