Orange and Pumpkin Soup

Lovely served at halloween parties, for a nice touch get culinary size pumpkins (small ones) scoop out the insides and flesh, neaten up and serve soup in the pumpkins for each guest, this is also good as no bowls to wash up!
Ingredients:
4 tablespoon olive oil
4 onions, chopped
4 garlic cloves, chopped
4 lb pumpkin, peeled and cut into chunks
5 1/2 pints stock, vegetable
4 tablespoons fresh orange juice
1 1/2 oz orange peel
2 tablespoons dried thyme
300 ml milk, skimmed
1 salt and pepper, season to taste
Directions:
1. Heat the oil in a very large saucepan, fry onions until soft, then add the garlic and the pumpkin and cook for about 2 minutes, stirring well.
2. Now add the boiling vegetable stock, the orange rind and juice and dried tyme and simmer, covered, for 20 minutes or until pumpkin is tender.
3. Blend the soup until smooth and then return to the saucepan and season to taste with salt and pepper add the milk and reheat the soup for about 3-4 minutes, or until soup is piping hot but not boiling.
4. Then serve immediately with crusty bread
