I love this dish...with chips or on chicken. Its delicious and healthy! Ingredients:
3 oranges |
1 yellow bell pepper, diced |
1 jalapeno chile (seeds and ribs removed for less heat), minced |
2 scallions, thinly sliced |
1 tbsp olive oil |
1 tbsp white-wine vinegar |
coarse salt |
ground pepper |
Directions:
1. Segment the three oranges, reserving 2 tablespoons juice. Cut segments into 1/2-inch pieces. 2. In a medium bowl, combine orange pieces, reserved juice, and the next 5 ingredients (bell pepper to the vinegar). 3. Season with salt and pepper; toss well to combine. Serve with tortilla chips or over meat, fish, or poultry. |
