Orange And Ginger Halibut Steaks |

I had this at a dinner recently and the hostess was kind enough to share the recipe. It was amazing. She served it with green beens and baked sweet potatoes Ingredients:
juice of 1 orange |
2 t brown sugar |
1” piece of fresh ginger (peeled and minced) |
1 t orange marmalade |
5 cloves garlic minced |
4 halibut steaks, about 6oz each |
2 t olive oil |
1 1/2 t light soy sauce |
Directions:
1. Combine the orange juice, sugar, ginger, marmalade and garlic in a blender, puree. Pour into a shallow casserole or baking dish; add halibut. Set aside to let marinate about 20 minutes. 2. Drain, reserving marinade. Heat oil in a large skillet over medium-high heat. Add the halibut steaks; cook until the fish browns around the edges, about 5 minutes. Turn; lower heat to medium. Cook until the fish flakes easily, about 4 minutes. Transfer to a platter. Add the reserved marinade to the skillet. Raise the heat to medium-high. Add the soy sauce; heat to a boil. Cook until mixture thickens, about 1 1/2 minutes. |
