Open-Faced Avocado Sandwiches |

Another recipe from my Mom. These are great with iced tea on a hot day. Ingredients:
1 large avocado, peeled, pitted and cut into thin slices |
1/3 cup italian dressing |
4 tablespoons mayonnaise |
4 slices bread, toasted (oatmeal or whole wheat is best) |
4 slices provolone cheese (whatever your preference. mom's original recipe called for american) or 4 slices gouda cheese (whatever your preference. mom's original recipe called for american) or 4 slices gruyere (whatever your preference. mom's original recipe called for american) or 4 slices swiss cheese (whatever your preference. mom's original recipe called for american) |
1 large ripe tomato, sliced into 8 slices |
1 cup alfalfa sprout |
Directions:
1. Toss avocado slices gently with Italian dressing; drain well, reserving the dressing. 2. Spread mayo evenly over 1 side of each bread slice. Top bread slices evenly with avocado, cheese slices, tomato and alfalfa sprouts. 3. Drizzle sandwiches evenly with reserved Italian dressing and serve immediately. |
