The plums in this cake make it so moist, and the colour from the fruit seeps into the batter to make it so appetizing. You could also use apricots or peaches instead of plums. Ingredients:
1 1/2 c all-purpose flour |
2 tsp baking powder |
1/2 tsp salt |
3/4 c plus 1 tbsp sugar |
1/2 c whole milk |
1/4 c vegetable oil |
1 large egg |
5 or 6 large black plums, halved & pitted |
1/4 tsp ground cinnamon |
2 tbsp cold unsalted butter, cut into small pieces |
Directions:
1. Preheat oven to 400 degrees F. Grease one 9” round cake pan. Whisk together flour, baking powder, and salt. 2. In a separate bowl, combine 3/4 c sugar, the milk, oil, and egg. Fold into flour mixture (shortcut - if using a Kitchenaid, just mix the dry together, then add the wet ingredients, one at a time) 3. Pour batter into pan and smooth top. 4. Arrange plums, cut sides up, over batter. 5. Combine cinnamon and remaining sugar and sprinkle over plums. Dot with butter. 6. Bake until top is dark golden, plums are soft, and a toothpick comes out clean – 30 to 35 minutes. Let cool before cutting |
