Papa could make up a mighty good meat loaf with what he had on hand. This is one of his creations. Ingredients:
2 lbs lean ground beef |
1 medium onion, chopped |
4 ounces pimiento, chopped |
2 garlic cloves, crushed |
3/4 cup oatmeal |
1/4 cup ketchup |
2 eggs |
1 1/2 teaspoons italian seasoning |
1/4 teaspoon black pepper |
1 1/2 ounces lipton onion soup mix, 1 envelop |
10 1/2 ounces tomato soup |
1 tablespoon worcestershire sauce |
1/2 teaspoon dried thyme |
1 teaspoon dried basil |
1/2 cup crushed pineapple |
Directions:
1. Preheat oven 350F degrees. 2. In large bowl combine all meat loaf ingredients mix well. 3. Press mixture into loaf pan. 4. Bake for 35; drain of fat. 5. Combine tomato soup and next 4 ingredients. 6. Mix well. 7. Pour topping over meat loaf. 8. Bake 35-45 minutes til meat is no longer pink inside. 9. Let stand 10 minutes before slicing. |
