I found this recipe in Gold Medal Flour Cookbook called-The Rainbow Bakery Childrens Cookbook. We decided to give this a try since we already had all the ingredients. I think next time I will add more oranges or maybe try peaches, apples or maybe berries. Read more . My step son did not want whip cream so he had a scoop of vanilla ice cream. Enjoy. Ingredients:
1 1/4 cup flour |
1 cup sugar |
1 1/2 tspn salt |
3/4 cup milk |
1/3 cup shortening |
1 tspn vanilla-i used 2 tspn for more flavor |
1 egg |
1 15oz can mandarin orange segments,drained |
dash of cinnamon & groung ginger-the recipe did not call for this but i thought it would give it more flavor |

Directions:
1. Heat oven to 350. Grease and flour 9x1 1/2 round pan-I used 8x8 square pan. 2. Beat all ingredients except oranges and whip cream in med. size bowl on low speed for 30 seconds.Make sure to get the side, beat on high speed for 3 minutes. Pour batter into pan. 3. Save 6-8 oranges for decorating. Put other oranges evenly on batter. 4. Bake 35-40 min. or until toothpick comes out clean. 5. Cool completely. Top with whip cream and remaining oranges |
