This rich-tasting but low-fat drink features oolong tea, a lightly fermented tea, the best of which comes from Taiwan. From Cooking Club of America. Ingredients:
4 cups water |
2 tablespoons lightly packed oolong tea leaves |
1 cup fresh mint |
2 cups peach nectar |
3 tablespoons sugar |
1/2 teaspoon vanilla |
fresh peach, wedges |
fresh mint sprig |
Directions:
1. In medium saucepan over medium heat, bring water to just below a simmer (190ºF.). Remove from heat. Add tea and 1 cup mint; let steep 3 minutes. 2. Strain tea. Add peach nectar, sugar and vanilla; mix well. Refrigerate until chilled. Serve garnished with peach wedges and mint sprigs. |
