Newspaper recipe from the Sacramento Bee for this unusal and most delcious onion ring loaf!!! Ingredients:
beer batter |
1 cup all-purpose flour |
2 teaspoons dry mustard |
1 teaspoon freshly grated nutmeg |
1/2 teaspoon salt |
4 eggs, separated |
2 teaspoons dijon mustard |
1 cup beer |
onions |
3 large onions, cut into 1/4-inch slices |
ice water |
vegetable oil for frying |
for loaf |
butter to coat loaf pan |
fried onion rings (see recipe) |
black pepper, to taste |
1 1/2cups (or more or less, to taste) monterey jack cheese |
Directions:
1. Prep does not include overnight chilling of batter. 2. Beer batter: 3. In a large bowl, combine flour, dry mustard, nutmeg and salt. 4. Set aside. 5. Combine 4 egg yolks with Dijon mustard and beer. 6. Add to flour mixture and stir until smooth. 7. Cover and refrigerate overnight. 8. Preheat oven to 400 degrees. 9. Separate onion slices into rings and cover them in ice water. 10. Let stand for 30 minutes. 11. Drain onions and pat dry. 12. Just before using batter, beat 4 egg whites until stiff. 13. Fold into batter. 14. In a skillet, add vegetable oil to reach 2 inches up sides of pan. 15. Heat to 375 degrees (check with a deep frying thermometer). 16. Dip onion rings in beer batter. 17. Shake off excess and fry in oil until golden brown. 18. Drain rings on paper towels. 19. Butter a 9-inch loaf pan. 20. Line bottom with a layer of fried onion 21. Sprinkle with pepper and a layer of shredded Monterey Jack cheese. 22. Repeat these layers until ingredients reach top of pan. 23. Bake at 400 degrees for 10 minutes. Invert onto a serving plate. 24. Serve warm. |
