From The woman's Day Encyclopedia of Cookery circa 1966 A different side dish with a nice presentation. Beets can be substituted for the onions. Ingredients:
easy cheese sauce (make first) |
3 tbl butter |
3 tbl flour |
3/4 tsp salt |
1/2 tsp worcestershire sauce (optional) |
1/8 tsp black pepper |
1 1/2 cips milk |
1 cup grated cheddar or swiss |
1 lb small white onions, peeled and parboiled |
Directions:
1. Cheese Sauce 2. Melt butter and remove from heat 3. Stir in flour and seasonings 4. Gradually stir in milk until well mixed 5. Cook over medium to medium high, stirring constantly, until thick and smooth (you may put the pan over boiling water to prevent sticking). 6. Cook 5 minutes longer, stirring often 7. Add cheese, sir until well blended 8. About 2 cups 9. Onions 10. Parboil and peel onions, arrange in buttered baking dish 11. Pour Easy cheese sauce over onions 12. sprinkle with grated cheese 13. Dot with butter 14. Broil until heated through and golden 15. 4 servings |
