Onion Soup With Champagne |

New Year's Day. And what do you do with all of the leftover champagne? SOUP! Ingredients:
2 large onions |
1 quart dry champagne |
1 garlic clove |
chopped parsley |
20 blanched almonds |
sliced french bread |
parmesean cheese |
Directions:
1. Slice the onions very thin and fry them lightly in butter. 2. Pour on the onions the champagne. 3. Add the parsley, almonds and garlic - put the garlic on a toothpick to make it easy to remove later. 4. Boil for 20 minutes and remove the garlic. 5. Place a slice of French bread in the bottom of each bowl, and ladle the soup over. 6. Sprinkle with Parmesean cheese. |
