Whenever I feel lazy to cook, I make soups. We do get a lot of ready-made soups in the market, but I prefer home-made soups - because its easy to make, nothing can beat it. One of his favourites is Onion soup. This is how I make it. Ingredients:
onions - 750g |
2 large tbsp butter |
oil - 1 tbsp |
salt and pepper |
a pinch of sugar |
flour - 1 tbsp |
stock - 1.5 l |
white wine - 125ml |
for garnish |
12 slices of french bread |
olive/ salad oil - 1 tbsp |
halved garlic cloves |
grated cheese - 100g |
Directions:
1. Cook the sliced onions in butter and oil until they are soft. Remove the lid of the pan and raise heat to a moderate flame. Stir the seasoning and sugar in and cook for about 40 minutes. Stir frequently. 2. Wait till the onions turn a deep brown. Stir in the flour and cook for 3 minutes. Pour in the hot stock and stir again to blend. 3. Now add wine. Simmer it for a while. Rub the garlic cloves on the surface of the bread. Sprinkle with cheese and serve it hot. |
