Onion Risotto

Ingredients:
3 large sweet onions, chopped
2 garlic cloves, pressed
1 teaspoon salt
2 tablespoons olive oil
1 (16-ounce) package arborio rice
8 cups chicken broth, warmed
1 cup dry white wine
1/2 cup shredded parmesan cheese
2 tablespoons butter or margarine
Directions:
1. Sauté first 3 ingredients in hot oil in a Dutch oven over medium-high heat until tender.
2. Add rice; cook, stirring constantly, 2 minutes. Reduce heat to medium; add 1 cup broth. Cook, stirring often, until liquid is absorbed.
3. Repeat procedure with remaining chicken broth, 1 cup at a time. (Cooking time for the rice mixture is about 30 minutes.)
4. Add wine; cook, stirring gently, until liquid is absorbed. Stir in cheese and butter. Serve immediately.
