Ingredients:
1 small potato
1 small onion, thinly sliced
1 can tuna in water, drained
1/2 c. frozen peas
1/2 c. frozen corn
2/3 c. celery
1 t. olive oil
1 salt and pepper
1 pinch cayenne pepper
1/2 t. oregano
1 t. balsamic vinegar
Directions:
1. Slice potato very thinly, add sliced celery, and saute both in oil. After a few minutes, add onion until these vegetables are tender.
2. Add remaining ingredients and cook until crispy. (Like hash browns...)
