1 small potato |
1 small onion, thinly sliced |
1 can tuna in water, drained |
1/2 c. frozen peas |
1/2 c. frozen corn |
2/3 c. celery |
1 t. olive oil |
1 salt and pepper |
1 pinch cayenne pepper |
1/2 t. oregano |
1 t. balsamic vinegar |
Directions:
1. Slice potato very thinly, add sliced celery, and saute both in oil. After a few minutes, add onion until these vegetables are tender. 2. Add remaining ingredients and cook until crispy. (Like hash browns...) |
