For onion lovers a quick and versatile onion pie. Great as is or as a base or other additions like bacon, cheese etc. . Ingredients:
3 lbs onions |
1 pint of cream |
3 beaten eggs |
salt and pepper tot aste |
pre-made pastry crust for 1 pie |
butter for frying |
Directions:
1. Peel and slice onions (i prefer to slice in strips rather than rounds) 2. fry in butter til golden brown 3. In a bowl beat eggs and cream together, season with salt and pepper 4. add onions and mix to the bowl 5. line a deep pie plate with one piece of the pre-made crust 6. pour mixture in pie plate 7. cover with 2nd pie crust 8. bake at 350 degrees for 1 hour 9. Variations add crumbled crisp bacon or canadian ham or slivers of sharp cheese or any cheese you like. |
