This goes really well with grilled or BBQ chicken Ingredients:
60 g butter |
3 onions, sliced |
2 cloves garlic, crushed |
2 cups basmati rice |
5 cups vegetable stock |
1/2 cup grated parmesan cheese |
1/2 cup chopped fresh parsley |
1 1/2 cups shelled peas |
Directions:
1. Melt butter in a large pan, add onion and garlic, stir and cook for 5 mins until soft and golden colour. 2. Add rice and stock, bring to the boil, stir. 3. Reduce heat to low simmer uncovered for 5 mins or until almost all of the liquid has been absorbed. 4. Add peas, stir until combined. 5. Cover pan and cook over very low heat for another 10 mins or until rice is tender. 6. Stir in parmesan cheese and parsley and serve immediately. |
