Onion Marmalade for New Zealand Meatloaf |

Can be served instead of the sauce over New Zealand Meatloaf. Ingredients:
2 tablespoons oil |
2 large onions, sliced |
1 tablespoon minced garlic |
2 oranges, juice and zest of |
1/2 teaspoon coriander |
1/2 teaspoon mixed spice |
1/2 cup brown sugar |
Directions:
1. Heat oil, add onions and sauté for 15 minutes until beginning to brown. 2. Add all other ingredients and cook further 10 minutes until mixture is thick. 3. Cool, and serve with the basic meatloaf that has no sauce. 4. Will keep in airtight container if fridge. |
