Cook this easy marmalade a few days before the party, and refrigerate (the flavor will improve). It's delicious with the Alabama Pulled Pork Sandwiches or spread on crackers. Or take a jar as a hostess gift when you're invited to someone else's party. Ingredients:
1 tablespoon butter |
2 cups diced sweet onion |
2 teaspoons brown sugar |
1/4 cup apple cider vinegar |
1/4 teaspoon dry mustard |
dash of kosher salt |
dash of ground red pepper |
1 bay leaf |
Directions:
1. Melt butter in a medium nonstick skillet over medium heat. Add onion to pan; cook 20 minutes or until tender, stirring occasionally. Stir in sugar; cook 2 minutes. Add vinegar and remaining ingredients; bring to a simmer. Cook 6 minutes or until most of liquid has evaporated, stirring occasionally. Discard the bay leaf. |
