ONION MARMALADE This recipe came from an estate sale. I obtained it when I purchased the family collection from the Benson Estate in Canton, Texas in 1987. Ingredients:
1/4 cup olive oil |
3 large sweet onions finely chopped |
1 cup dry red wine |
1/4 cup balsamic vinegar |
1 tablespoon granulated sugar |
1/2 teaspoon dried thyme |
1/4 teaspoon salt |
1/2 teaspoon freshly ground black pepper |
Directions:
1. Sauté onions in oil over moderate heat until browned approximately 10 minutes. 2. Add remaining ingredients and reduce heat to low. 3. Simmer uncovered stirring occasionally for 20 minutes then remove from heat and let cool. |
