Onion Marmalade

Good with meatloaf, and cold meats and on sandwiches.
Ingredients:
3 tablespoons olive oil
1 kg red onion
3 tablespoons demerara sugar
1/2 teaspoon pepper
1/2 teaspoon red chili pepper flakes
1/2 teaspoon cinnamon
1/2 teaspoon nutmeg
3 tablespoons red wine vinegar
Directions:
1. Heat the oil in a saucepan over medium heat and saute the onions for 5 minutes.
2. Add the remaining ingredients, except the vinegar, and cook for 5 minutes or until the mixture begins to caramelise.
3. Stir in the vinegar and continue to cook over a low heat, stirring occasionally for 20 minutes.
4. Transfer to a clean bowl and cool.
5. I'm not sure of the keeping quality of this, but we have used it for up to a week, kept in the fridge.
6. It was all gone after that!
