From Hans Anderson, Executive Chef of Cragun's Resort Gull Lake, Brainerd, MN. Ingredients:
1 tablespoon butter |
2 onions, large, yellow |
2 tablespoons sugar |
1/2 cup red wine |
1/4 cup white vinegar |
1 bay leaf |
1/2 teaspoon thyme leaves |
1/4 cup grenadine |
salt |
pepper |
Directions:
1. Melt butter in saute pan. 2. Add onions and sugar. 3. Cook for 5 to 8 minutes until onions are caramelized. 4. Add red wine, white vinegar, bay leaf, thyme, grenadine and salt and pepper. 5. Simmer until liquid is gone. 6. Serve chilled. 7. This unique accompaniment will go well with almost any dish. Poultry, beef and game meats are best served with this on the side. Onion lovers will be creative with its use. |
