A low calorie vegetable or vegetarian entree. Cut the slices in half for a warm first course or a 65 calorie snack Ingredients:
1 cup egg substitute |
1 cup skim milk |
2 cups cabbage, cut in small pieces and blanched |
1/2 onion, diced |
1/2 cup parmesan cheese |
1/2 cup cottage cheese |
1 tsp marjoram |
1 tsp basil |
1 tsp salt |
1/2 tsp pepper |
Directions:
1. Blanche the onion in water. 2. Mix egg substitute and skim milk. Mix in the parmesan cheese, herbs, salt and pepper and the cottage cheese. 3. Put the cabbage in a 9 inch fluted quiche pan. Pour the custard over the cabbage. Bake the custard at 375° for about 30 minutes or until it is set |
