I've always been a huge fan of french onion soup, so when I came across this one courtesy of Rachel Ray, I just had to try it. I wasn't disappointed! Ingredients:
1 pound sliced bacon, chopped |
4 large white onions, chopped |
salt |
32 oz. container of chicken broth |
1/4 cup flour |
1 cup of whole milk or half and half |
1/4 cup finely chopped chives |
Directions:
1. In a large dutch oven, cook the bacon over medium heat until crisp, about 12 minutes. Using a slotted spoon, transfer to paper towels to drain. Add the onions to the pot, season with salt and cook for about 10 mintues. 2. Sprinkle the onions with the flour and stir for about 1 minute. Stir in the chicken broth and bring to a boil. Lower the heat and simmer for about 30 minutes. 3. Stir in the milk or half and half and heat through. 4. Garnish with the bacon and chives and serve. |
