Onion Carrot Cashew Sandwich |

A unique vegetarian sandwich that is quite good. Ingredients:
1/4 cup carrot |
1/2 cup onion |
1/2 teaspoon minced garlic |
1 tablespoon olive oil |
10 cashews |
1 slice of whole wheat sandwich bread |
ranch dressing |
Directions:
1. Julienne the carrots and chop the onions. 2. Put olive oil on a frying pan and turn the heat to medium high. 3. Drop the carrots and onions into the pan. 4. Cook them, occasionally stirring, for about a minute or until the onions are almost transparent. 5. Add the garlic and stir it in with a spatula. 6. Cook 20 seconds. 7. Pour the vegetables over the piece of untoasted bread. 8. Grab a handful of paper towels and wipe the remaining garlic bits and oil loosely out of the pan (since it is hot, be careful). 9. Put the heat to high and add the cashews to the pan. 10. Toast them for about 30 seconds, tossing once. 11. Turn the heat off and pour the cashews ontop of the open faced sandwich. 12. Drizzle a tablespoon or two of ranch dressing over the top. 13. Fold the sandwich as best as you can and eat up. |
