You can prepare the biscuit dough a day in advance and refrigerate it. Remove from food processor, and cover in plastic wrap. Uncover dough, shape it, and bake the biscuits the day of the party. Making the dough in the food processor is a breeze, but if you don't have one, you can make it by hand, using a pastry blender or two knives to cut into the shortening.
Ingredients:
cooking spray
1 cup minced fresh onion
1/2 teaspoon sugar
2 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
3 tablespoons vegetable shortening
3/4 cup low-fat buttermilk
1 egg, lightly beaten
2 teaspoons water
Directions:
1. Preheat oven to 450°.
2. Heat a small nonstick skillet coated with cooking spray over medium-high heat. Add onion and sugar; sauté 8 minutes or until golden brown. Cool.
3. Lightly spoon flour into dry measuring cups; level with a knife. Place flour, baking powder, baking soda, and salt in a food processor; pulse 2 times or until blended. Add the shortening, and pulse 2 times or until combined. Sprinkle onion mixture over flour mixture. With processor on, slowly add buttermilk through food chute; process until dough forms a ball.
4. Turn dough out onto a floured surface, and knead lightly 4 to 5 times. Pat dough into an 8 x 6-inch rectangle; cut into 12 squares. Place on a baking sheet. Combine egg and water, and brush over biscuits. Bake at 450° for 11 minutes or until golden.
