Onion Bhajis With Cucumber Raita Dip |

Deep fried battered onions with dip, not really a healthy choice but delicious Ingredients:
1 large egg |
1 tbsp lemon juice |
8 tbsp cold water |
6oz plain flour |
1 tsp ground cumin |
1/2 tsp turmeric |
11/2-2 tsp chilli powder |
1 tsp garam masala |
11/2 tsp salt |
6oz onions, finely chopped |
lemon wedges |
cucumber raita ingredients |
1/4 cucumber, deseeded and finely chopped |
5oz low fat natural yogurt |
3/4oz pack of fresh mint, roughly chopped |
pinch of cumin |
Directions:
1. Break the egg into a bowl, add the lemon juice and water and lightly whisk 2. in another bowl, sieve the flour and spices together, then stir in salt, 3. make a well in the middle of the flour mix, pour in the egg mixture, 4. using a fork, gradually mix together to form a thick batter, leave to stand for 10-15 minutes 5. heat the oil in a deep fryer until it reaches 170c/ 325f 6. stir the onions into the batter, ( i prefer to leave the onions mixed in the batter over night in the fridge) 7. lower a rounded tablespoon of the mixture carefully into the hot oil and cook for approx 4 minutes, turning the bhajis frequently with a slotted metal spoon 8. remove from the oil and drain on kitchen paper, 9. meanwhile 10. place all the raita ingredients into a bowl,mix to combine 11. serve the bhajis with a wedge of lemon and the raita dip |
