Onion-Basil Grilled Veggies |

Ingredients:
3 ears corn, each cut into 3 pieces |
1 lb medium red potatoes, quartered |
1 cup baby carrots |
1 green bell pepper, cut in 1 inch pieces |
1 large red bell pepper, cut in 1 inch pieces |
1 (1 1/4 ounce) envelope onion soup mix |
3 tablespoons minced fresh basil (or 1 tbsp dried) |
1 tablespoon olive oil |
1/4 teaspoon pepper |
1 tablespoon butter |
Directions:
1. In a large bowl combine the first 9 ingredients. Toss to coat. Place on a double thickness of heavy duty aluminum foil. Piece should be about 28 x18 big. Dot with butter. Fold foil around the veggies and seal tightly. 2. Grill, covered, over medium heat for 25-30 minutes, or until potatoes are tender. Turn once while grilling. |
