Great for a quick snack Ingredients:
3 tbls. olive oil |
1 large onion, chopped |
4 shallots, chopped |
1/2 lb. baby spinach |
3 oz. cream cheese, softened |
1 container sour cream (16oz.) |
salt and pepper to taste |
Directions:
1. Heat oil over medium high heat to hot but not smoking 2. Add onion and shallot and saute stirring until lightly browned 3. Reduce heat to low and cook until tender 4. Add spinach stir until just wilted 5. Let cool 6. Stir remaining ingredients into onion-spinach mixture 7. Chill for about an hour |
