Sautéed onion and herb couscous. One of my all time favourite recipes, and the one i am always being asked to make and give the recipe for. Ingredients:
2 tablespoons butter or margarine |
3 gloves garlic, chopped |
2 onions, finely chopped |
salt and pepper to taste |
1 teaspoon thyme |
1 teaspoon oregano |
1 cup of couscous |
1 cup of chicken stock |
1 tablespoon of olive oil (optional) |
Directions:
1. In pan, melt butter over medium heat. Fry garlic and onions, stirring occasionally. Season with salt, pepper, thyme and oregano. Fry until softened, about 4/5 minutes. 2. In a pot bring chicken stock to boil. When boiling stir in couscous (and if desired olive oil). Cover and remove from heat immediately. Let stand 5 minutes. 3. Add the onions and garlic to the couscous, stir to combine. Fluff with folk. 4. Serve immediately. |
