This recipe came from my nan so can be dated back to at least 1900, interestingly my husbands nan also made a version of this so it must be a traditional British Summer salad. Cooking time is actually chilling time. Ingredients:
1 cucumber, thinly sliced |
1 mild onion, thinly sliced |
1 cup hot water |
1 cup white malt vinegar |
1/4 teaspoon ground white pepper |
salt |
1 cup sugar |
Directions:
1. Combine all ingredients except the cucumber and onion and stir until the sugar disolves. 2. Stir in cucumber and onion. 3. Chill for at least 5 hours or overnight. |
