Very, very tasty. We love this. I substitute the fried beans with another can of pinto beans only because i like the consistency better, this is also good with the refried beans. It's a matter of choice. Enjoy Ingredients:
1 large yellow onion chopped |
1 pound chorizo |
28 ounces canned chopped tomatoes with juice |
4 cups chicken stock |
1 tablespoon cumin |
1/4 teaspoon cayenne pepper |
15 ounce can pinto beans drained |
15 ounce can refried beans |
Directions:
1. Cut up chorizo into small pieces. 2. Cook chorizo and onions in sauté pan for 5 minutes. 3. In large pot add tomatoes and chicken broth then bring to a slow boil. 4. Add cumin, cayenne, onions and meat and simmer 5 minutes. 5. Add refried beans and pinto beans mixing well. 6. Simmer for 15 minutes more and serve. |
