One Skillet Chorizo And Rice |

I've played around with this dish a few times and I think I've found the winner! Once again, my savory and sweet attraction comes into play, although it is much more savory than sweet. Ingredients:
1 lb. fresh chorizo sausage |
olive oil |
1 large sweet onion |
20 baby carrots |
1 whole roasted red pepper |
1 ancient sweets pepper, seeds removed ( or another whole roasted red pepper) |
1 jalapeno pepper, seeds and ribs removed |
1/2 head cabbage |
1 tsp. salt |
1 cup chicken broth |
2 bags success style rice |
Directions:
1. Boil salted water and cook rice for 10 minutes 2. Over medium high heat, coat the bottom of a large heavy skillet with olive oil 3. Break sausage into skillet and brown 4. While sausage is cooking, chop the onion and add to skillet and stir 5. Then chop the carrots and add 6. Then chop all the peppers and add 7. Then chop the cabbage, slice the wedge on an angle 8. Stir all together and add the chicken broth and salt 9. Cover the skillet until rice is done, then add the rice 10. Cover and simmer for another 15 minutes 11. Save the rice water in case you need to add a spoonful or two while the dish is simmering |
