One Potato, Two Potato Chicken Stew |

From 500 Practically Fat Free One Pot Cookbook. Ingredients:
2 1/4 cups chicken broth |
2 chicken tenderloins, boneless, chopped |
2 onions, sliced |
4 scallions, sliced |
2 garlic cloves, minced |
1 jalapeno pepper, seeded and minced |
4 celery ribs, sliced |
2 tomatoes, chopped |
1 cup potato, diced |
1 cup sweet potato, diced |
1/2 teaspoon dried oregano |
2 bay leaves |
1/2 teaspoon black pepper |
1/4 cup parsley, chopped |
Directions:
1. Heat 1/4 cup broth in large saucepan. Add chicken and saute till no longer pink. 2. Add onions, scallions, garlic, jalapeno pepper and celery and saute till onion softens, 4 more minutes. 3. Stir in remaining broth, tomatoes, potato, sweet potato, oregano, bay leaves and black pepper. Bring to a boil, reduce heat, cover and simmer about 18 minutes. 4. Remove bay leaves and serve topped with parsley. |
