One Pot Vegetable Bean Casserole |

This is incredible. Loaded with great flavors and lots of herbs. Ingredients:
2 tablespoons butter |
3 garlic cloves minced |
2 white onions chopped |
2 carrots diced |
1 tablespoon red wine vinegar |
1/2 teaspoon dried rosemary crushed |
1/2 teaspoon pepper |
1 pinch hot pepper flakes |
3 cups spaghetti sauce |
19 ounce can kidney beans drained and rinsed |
2 cups curly pasta |
2 cups broccoli chopped |
1/3 cup freshly grated romano cheese |
Directions:
1. In nonstick skillet melt butter over medium low heat. 2. Cook garlic, onions and carrots covered for 10 minutes or until softened. 3. Stir in vinegar, rosemary, pepper and hot pepper flakes. 4. Cook covered for 15 minutes then stir in sauce and bring to boiling. 5. Reduce heat then simmer 5 minutes then stir in beans and set aside. 6. Meanwhile in large pot of boiling salted water cook pasta 5 minutes. 7. Add broccoli then cook 1 minute then drain and return to pot and stir in tomato mixture. 8. Pour into greased square baking dish and sprinkle with cheese and cover with foil. 9. Bake in 350 oven for 30 minutes. |
