It started out as a chili and just kept evolving into more of a taco style soup but I think it's a good mix of the two dishes. Ingredients:
1/2 lb ground turkey |
1 tbsp garlic, minced |
1/2 small onion, chopped |
15 oz can tomatoes, diced |
15 oz can corn |
15oz can kidney beans |
2 oz green chilis, chopped |
1 1/2 tbsp chili powder |
2 tsp sea salt |
1 tsp red pepper flakes |
freshly chopped cilantro |
tortilla chips |
Directions:
1. Brown turkey with garlic and onion in pot over medium heat. 2. Add rest of ingredients (reserving a little cilantro) and simmer, uncovered for 15 min. 3. Top with rest of cilantro and a dollop of sour cream (if desired). 4. Serve with chips. ( I like to use the chips to scoop up the chili but my dad likes to break 'em up and put them on top) |
