One Pan Dish Fish Curry

This is a great fish curry that can be served as a single dish as a meal
Ingredients:
1 onion, diced
400 g potatoes, cut into 2cm cubes
200 g pumpkin, cut into 2cm cubes
2 teaspoons ground cumin
1 teaspoon ground coriander
1 teaspoon minced garlic clove
1 teaspoon ground ginger
1/4 teaspoon dry crushed red pepper
1/4 teaspoon salt
1 (400 ml) can crushed tomatoes
1 cup chicken stock or 1 cup fish stock
500 g white fish fillets
1/4 teaspoon garam masala powder
1 tablespoon slivered almonds
Directions:
1. Heat a pan and cook onion till soft.
2. Add potatoes and pumpkin and cook on high for 5min.
3. Add spices, tomatoes, stock and bring to the boil.
4. Turn down the heat and cook for 15min.
5. Add fish and simmer for 5 min or till fish is cooked (do not stir).
6. Add Garam Masala and serve is serving bowls.
